📚 Sources & methods

Seededly's preserving and food-safety guidance follows research-based, lab-tested processes. We don't invent canning times — we point you to the tested standards:

National Center for Home Food Preservation — University of Georgia / USDA-funded; the U.S. reference for safe canning, freezing, drying, pickling, fermenting and curing.

USDA Complete Guide to Home Canning — Agriculture Information Bulletin No. 539 (2015), the official tested processing times and pressures.

So Easy to Preserve, 6th ed. — UGA Cooperative Extension.

Safety: always use a current tested recipe for exact times, pressures and altitude. Low-acid vegetables must be pressure-canned, never water-bathed. When in doubt, freeze or dehydrate.

Historical & traditional uses

The "Historical & traditional uses" on each plant are folklore and heritage, not medical advice — Seededly does not practice medicine. Drawn from classic herbal literature, with safety from NIH:

A Modern Herbal — M. Grieve (1931), the classic encyclopedia of herb folklore and traditional uses.

NIH — NCCIH Health Information — research-based safety on herbs and botanicals, including herb-drug interactions.

Always talk to a qualified healthcare professional before using any plant as a remedy, especially if pregnant, nursing, or taking medication.

{{ wGapNote }}

Gallons on hand
Do you have a filter?

{{ wFilterNote }}

Store this much

Plan 1 gallon per person per day — about half for drinking, half for cooking & hygiene. A family of 4 for two weeks ≈ 56 gallons; a 55-gal barrel ≈ ~14 days. Rotate stored water every 6 months, and keep a filter for any backup source.

Choosing a filter
🪣 Gravity (Berkey / Alexapure)
Best all-round — 200+ contaminants incl. lead & pesticides, no power or plumbing. ~$330–450, slower.
💧 Hollow-fiber (Sawyer / LifeStraw)
Cheapest that's good — ~$25, bacteria & protozoa only (not viruses, chemicals or metals). One in every kit.
🚰 Reverse osmosis (under-sink)
Best for tap — strips heavy metals, arsenic, nitrates. Needs pressure + power, wastes some water.
🫗 Carbon · UV · boiling
Backups. Carbon = taste only (not pathogens); UV needs clear water + power; boiling kills pathogens but leaves chemicals.

Picks — Best value: a countertop gravity system. Cheapest that works: a Sawyer Squeeze. Most complete: gravity for daily + a Sawyer for go-bags + RO if your tap carries metals.

Which method — and is it safe?
🍅 Water-bath — high-acid only
Fruit, jam, pickles, tomatoes with added bottled lemon/citric. Keeps 1+ yr.
🫘 Pressure can — low-acid, no shortcuts
Vegetables, meat, beans must be pressure-canned — botulism risk otherwise.
❄️ Freeze · ☀️ dry · 🥬 ferment
Freeze beans/berries/pesto (blanch first); dry herbs/apples/jerky; ferment kraut & pickles in a 2–2.5% salt brine.

⚠️ The rule: low-acid foods are pressure-can only; tomatoes need added acid. Methods follow USDA / NCHFP tested guidance.

Fats to stock

You need both — fats that take high heat, and good everyday fats.

🔥 High-heat (searing, frying)
Avocado oil, ghee, tallow (rendered beef fat), lard, refined oils — high smoke points that won't scorch.
🧈 Everyday & finishing
Butter, olive oil, lard — flavor, baking, and a drizzle to finish.
🐖 Render your own
Lard from a hog, tallow from a beef share — free, shelf-stable fat from animals you already raise.

Fats are the hardest food group to grow, so plan to stock or render — roughly a gallon of cooking fat per person a year.

Energy

{{ eWoodNote }}

Run smart, not just loud

Pair a gas generator with a battery bank. Charge the bank in short bursts, then live silently off the inverter — only fire the generator up again when the batteries run low. An inverter generator throttles to the load, so kept lightly loaded (about a third of its rating) it sips fuel with the least engine stress. Power mainly a fridge and small electronics off the bank and you can stretch close to 2 days on a single gallon — versus a generator running around the clock.

What it takes: a battery bank (LiFePO4 lasts longest), an inverter/charger sized to the generator's steady watts (~40–60A charge), matched voltage (12 / 24 / 48V).
Pure sine vs standard
〰️ Pure sine wave — for the house
Fridge, freezer, well pump, electronics — anything with a motor or charger. Clean power, runs cool & efficient.
⌁ Modified / standard — rough stuff only
Power tools, lights, heaters. Cheaper, but wastes ~10–20% as heat & stresses motors — keep it off electronics.
🔇 Inverter generator — the middle path
Pure sine AND auto-throttles to load — quieter, far less fuel when lightly loaded.

Solar & wind: clean, silent, no fuel — but run the payback first. Years to break even ≈ system cost ÷ yearly fuel/grid savings. Home solar often lands ~6–12 yrs; a small panel + battery just to guard the freezer pays back fast in food you don't lose. Wind only earns its keep with steady, open-site wind.

Egg-lay through the year

A laying hen gives ~4–5 eggs a week at peak (spring–summer) and tapers toward winter as days shorten. Your {{ lvHens }} hen(s) ≈ {{ lvEggsWeek }} eggs/week in season.

JanAprJulOctDec

A timed coop light (14 hrs of light) keeps hens laying through the short days of winter.

Do hens pay off?

Backyard eggs run about $2.50–3.00/dozen in feed once hens are laying, versus $4–5 at the store — so a small flock roughly breaks even to modestly nets out, and earns its keep most in scraps eaten, manure for the garden, and eggs on hand when the store runs short. The real win is resilience, not riches.

Before you go — keep your garden for less?

You don’t have to lose what you’ve built. Step down to a cheaper plan and keep growing:

🌱

You’ve already built your garden

Cancel and you’ll lose your {{ cancelPlanName }} features — the plant doctor, planner, and everything you’ve tracked beyond one crop. Your plan stays active until the end of the period you’ve already paid for.
